Christi Ansotegui and Gina Ansotegui Urquidi opened Epi's on January 26, 1999 in honor of their grandmother, Epi Inchausti, Epi was born in Bizkaia, Spain in 1903. She married David Inchausti in 1925, then traveled to America in 1929. David and Epi operated the Gem Bar and boarding house in Hailey, Idaho. Their children are Rosario, Dorothy, Maria Louisa, Josephine, Juanita, David and Julia, Epi became well known for her delicious meals, She died in 1983 at the age of 80. The example she set continues to touch people through the lives of her children, grandchildren and great-grandchildren.
